This Rose is made from100% Pinot noir by the saignee method – which is to say the
grapes are picked at full ripeness, sorted, crushed, destemmed and cold soaked for
24 hours, at the end of which the clear must is siphoned off and the marc discarded
to compost. After cold settling the must is fermented in steel, fined, filtered and
bottled. It is a fully dry Rose which can be drunk immediately.
